Papa Fertitta’s Muffy Sandwich

First grab a Kaiser roll, mustard, your favorite cheeses and cold cuts, and, of course, Papa Fertitta’s Olive Mix. Next, slice the roll and put mustard on the top half, layer your cheeses and cold cuts on the bread. Heat in an oven until the cheese has melted and bread is toasted. Top off the sandwich with Papa Fertitta’s Olive Mix. Replace the top of the bread, cut in half and enjoy.
 


Fish Fillets in Tomato Sauce

    4 Fillets (Fish of your choice)
    2 tbsp Vigo Spanish olive oil
    1 cup sliced onions
    1 clove garlic, minced
    1 tbsp Chopped parsley
    One 16 oz. can of tomatoes
    2 tbsp Water
    1/4 tsp Oregano
    1/2 cup Papa Fertitta’s Olive Mix

Wash and dry fish. Heat oil in skillet. Sauté onions and garlic 10 minutes.  Add parsley and tomatoes, water, oregano, olive mix. Cook 5 minutes. 

Arrange fish in skillet, cover and cook for 10 minutes, turn fish over and cook a few minutes longer.  Serve with buttered rice.

Serves 4.
 


Eggplant Parmigina Sauce

    1 medium onion
    2 cloves garlic, minced
    3 tbsp. Vigo Spanish olive oil
    1 small can tomatoes
    3 small tomato paste cans of water
    Pinch of salt and pepper

Brown onion and garlic in saucepan with olive oil, add tomatoes and water and seasoning cook down for 1 hour.  Peel and slice eggplant in frying pan, fry eggplant in oil until brown. In a baking dish place eggplant and sauce and Romano cheese and layer. Repeat until all of eggplant is used.

Top with cheese and chopped parsley. Bake for 5 minutes at medium heat, or until cheese melts.
 


Italian Sausage and Peppers

    2 lbs Italian sausage
    3 green peppers
    1 red pepper (sweet)
    1/2 cup Vigo Spanish olive oil
    1/2 cup red wine
    Salt and pepper

Cut peppers in large chunks place in skillet sauté peppers in oil until softened, sprinkle salt and pepper to taste.  Lift peppers out of dish and set aside.

Brown sausage in same pan. When browned add red wine. Cover pan with foil and bake sausage at 350F oven for 40 minutes.  Uncover and add the sautéed peppers.  Bake for an additional 15 minutes and serve.
 

Papa Fertitta’s Italian Deviled Eggs

Hard boil as many eggs as you like.  Cool and peel, cut in half. Separate yolks from whites, place yolks in small bowl and place whites aside.  Place 3 to 4 heaping tbsp of Papa Fertitta’s Olive Mix in bowl with egg yolks, add salt and pepper to taste.  Add mayonnaise and a little mustard until moist.

Mash ingredients together until combined.  With spoon refill whites with filling add a few pieces of fresh chopped parsley as garnish, and sprinkle with paprika.
 


Papa Fertitta’s Italian Tortilla Roll Ups

Flour tortillas, cream cheese and Papa Fertitta’s olive mix - mix cream cheese and olive mix together.  Spread on tortilla roll and cut.  Also try adding a thin slice of ham.
 


Mama Fertitta’s Green Beans

    3 cans of green beans - drained
    1 small onion chopped
    1 small clove of garlic minced
    1/2 cup Vigo Spanish olive oil
    2 cups seasoned Italian bread crumbs
    1/2 cup Romano grated cheese

Brown onion and garlic in olive oil - when browned place green beans, bread crumbs and cheese in pan and mix well place in preheated 300F degree oven for 10 to 12 minutes and serve.

Serves 6 to 8.
 

Papa Fertitta’s Oven Baked Chicken Breast

    6 large chicken breast
    1/2 cup Vigo Spanish olive oil
    1 cup seasoned Italian bread crumbs

Dip breasts in olive oil then coat with bread crumbs.  Place in oven pan cook 25 minutes and 350F degrees.

Serves 6.
